The United States Department of Agriculture (USDA) uses a standardized 100-gram portion size to calculate nutrition facts. This universal baseline allows for consistent comparisons across foods of varying sizes and serving portions.
By using a 100-gram standard, consumers, dietitians, and researchers can accurately compare nutrient content (such as calories, vitamins, and minerals) across different products. This approach simplifies nutrition labeling, highlights nutrient-dense or low-nutrient foods, and supports informed dietary choices.
How To Use It
To ensure accurate nutrition calculations in reciProfity, each ingredient must include Pack Size details. This allows the system to understand how the ingredient is purchased and convert volume to weight as needed.
Because USDA nutrition data is standardized to 100 grams, the ingredient must provide either:
- A weight in the Pack Size, or
- A volume-to-weight conversion.
The weight does not need to be specified in grams. reciProfity will calculate the nutrition facts based on the provided conversion.
How To Convert Nutrition Facts to 100-Gram Portions
This process ensures that the nutrition output in a Serving Recipe matches the original packaging data.
Example: Crispbread
-
Start with the packaging label.
For example, the crispbread label provides nutrition facts for a 33-gram serving, as shown below. -
Convert to 100 gram Portions.
To standardize nutrition data, convert the values from the product’s nutrition label to a 100-gram portion using basic math.
Start by identifying the serving size in grams from the packaging. Then, for each nutrient:
- Divide the nutrient value by the serving size to get the amount per gram.
- Multiply the result by 100 to get the value per 100 grams.
Example: Crispbread (33g serving size)
From the packaging label:
- Calories: 10 / 33g = 0.30 calories per gram × 100 = 30 calories
- Sodium: 250 mg / 33g = 7.57 mg per gram × 100 = 757 mg
- Carbohydrates: 2 g / 33g = 0.06 g per gram × 100 = 6.06 g
Repeat this process for each nutrient listed on the label.
-
Create a Custom Nutrition Code.
To do this:
- Open the hamburger menu in the top left of the screen, then click Optimizer, then click Custom Nutrition
- Next, click Add Nutrition to add a new nutrition code.
- In the Custom Nutrition form, enter the converted values (e.g., calories, sodium, carbohydrates) into the appropriate fields.
- Save the custom code.
- Open the hamburger menu in the top left of the screen, then click Optimizer, then click Custom Nutrition
-
Validate the Output.
Add the crispbread box as the sole ingredient in a Serving Recipe. The Nutrition section at the bottom of the recipe will display the calculated values. These values should match the original packaging label, confirming that the 100-gram conversion and custom nutrition code were entered correctly. The image below shows the nutrition facts output from reciProfity, which matches the original packaging data for a 33-gram serving.
Additional Notes
- You can use percentages of ingredients in recipes, such as brines.
- Nutrition data can also be added to Prep Recipes.
