In the example discussed below, our goal is to ensure that 100% of the cost is included in the finished product. However, only 45% of the brine volume will be retained in the final product, while the remaining 55% will be discarded. As a result, we will only include 45% of the nutrients from the brine in the Nutrition Label.
How to use it
Brine is used to make corned beef, with any surplus discarded. While the cost of the brine is fully attributed to the final product, only a portion is actually absorbed into the meat (i.e., the nutritional amount). reciProfity now calculates the amount of brine absorbed based on the preparation percentage, ensuring the nutritional label reflects accurate sodium (salt) levels and avoids overstating them.
In the recipe, specify the nutritional amount of each ingredient in the Prep column. For example, n45% in the Prep column indicates that 45% of this ingredient should be used in the recipe based on its nutritional value.
