Why it's important
Conversions between weight and volume are crucial for accurately calculating food costs. reciProfity offers two types of conversions: ingredient conversions and prep recipe conversions. Ingredient conversions refer to the difference between how a product is purchased and used, while prep recipe conversions focus on calculating the yield of a recipe's batch size versus its sellable portion size. The process for both scenarios is consistent: you are converting a larger unit (such as a case, bag, pound, or pie) into a smaller unit.
-
You purchase a loaf of bread and sell it by the slice.
-
You make a pie and sell it by the slice
-
Any time you purchase whole units or create a prep recipe, you'll need conversions to ensure the original cost transfers to the finished sellable item.
How to use it
Conversion in a Prep Recipe:
Here is an example in a Prep recipe for a tray of Blondies. We make 1 large tray and then cut it into 50 blondies.
Prep recipes have a Conversion section.
- Yield / Portion: = 1 tray
- There are 50 ea Per 1 Tray. (The blondies are priced by the ea)
- Create a Serving recipe for Blondies with the unit being 1 ea.
- If you pre-bag them you can enter however many Blondies you put into a bag, plus the cost of the bag, label, and tie!
Conversion in an Ingredient:
Let's use a loaf of bread as an example. You purchase 15.5-oz loaves of French bread and want to convert them to slices to price in a serving recipe.
- You can enter it as either loaf or 15.5 oz in the Pack Size field:
- In the conversion section, you can enter it either way (Per 1 loaf OR Per 15.5 oz). It just has to match the Pack Size.

Now, when it's used in a recipe, it can be used and priced as a 1 slice ingredient:
You can use the same configuration for fruit, such as a whole pineapple cut into slices for use in a drink.
