Conversions in prep recipes allow you to cook large batches and break them down into serving portions by weight or volume. For example, you can convert 20 quarts of soup into 8 oz, 16 oz, and 32 oz containers, with a separate serving recipe created for each size. You can also include packaging components like containers, lids, and labels in the serving recipe.
This feature is especially useful for items like pies, trays of baked goods, or bread, where you prepare a whole item and then slice it into serving portions by volume.
How It Works
Let’s look at a prep recipe for a vegetable side dish that cooks down to 8 lbs and is served by the ½ cup.
- The Yield/Portion is set to 8 lbs.
- In the Conversions section, you enter 4 cups per lb.
- This tells reciProfity that ½ cup equals 2 oz, which allows it to calculate the cost — in this case, $0.377 per serving.
The conversion is entered as: “There are 4 cups per lb.”
With this information, reciProfity can generate serving recipes using any weight (lb, oz) or volume (tsp, tbsp, cup, pint, gallon).
