reciProfity's default global food cost percentage is 30%.
This global 30% can be adjusted or different percentages for specific meal types (such as Entrées, Bars, etc.) can be set in the Manage Categories section of The Optimizer.
The global percentage applies to any recipe that lacks a Primary Category with an assigned food cost % or margin %.
To reset the global percentage,
1) Click on the hamburger menu in the top left corner
2) Click on The Optimizer.
3) Choose "Set Food Cost % or Margin %"
Set the desired food cost % or margin %. Restaurants and cafes typically think in terms of food cost percentage, while retailers focus on profit margins. A food cost of 30% corresponds to a profit margin of 70%.
Navigate to the Manage Categories section of the Optimizer to apply a specific food cost % or Margin % to specific recipe categories, such as entrees and desserts.
